- 1 cup pumpkin purée (not pie filling)
- 1 large egg
- ½ cup unsalted butter, melted
- 1 cup maple syrup or maple sugar
- 2 tsp vanilla extract
- 1 ½ cups rolled oats
- 1 cup flour
- 1 tsp baking powder
- 2 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp ginger
- Pinch of salt
- Optional: ½ cup chopped pecans
Instructions
Preheat oven to 350°F. Line a baking sheet with parchment.
In a bowl, mix pumpkin, egg, butter, maple syrup and vanilla.
Then add the oats, flour, baking powder, spices, and salt.
Mix wet into dry until just combined. Fold in pecan nuts if using.
Scoop dough (about 2 tbsp each) onto sheet, flatten slightly.
Bake 12–14 minutes until edges are golden and centers set.
