Healthy Chicken Tenders For The Whole Family
If you like a quick and easy dinner recipe that everyone including your picker eaters will enjoy then you will LOVE this! Chicken tenders are my kid’s favorite thing to eat and with me wanting to have a healthy version of their favorite food I came up with this recipe! It’s super simple to make them! You can also add them to your at-home salad bar!

Chicken Tenders
Ingredients
1.5 pounds chicken breast or chicken breast tenders
2 large eggs
1 cup almond flour
1 cup Unbleached all-purpose flour
3/4 teaspoon garlic powder
1/2 teaspoon black pepper
3/4 teaspoon salt
1.5 teaspoons Parsley or Italian seasoning (optional)
Olive Oil Or Avocado Oil (for frying can also use coconut oil if you want a hint of coconut chicken)
Directions
1. If the chicken tenders are not already cut, slice the chicken breasts into strips.
2. In a shallow bowl, beat the eggs until smooth.
3. In a separate bowl, combine almond flour, all-purpose flour, garlic powder, herbs (if using) pepper, and salt. Mix well.
4. Dredge each chicken tender into the egg mixture, then coat the chicken in the flour mixture, ensuring it’s well coated. Shake off any excess.
5. In a large skillet, add enough oil to cover the bottom (about 1/8″ deep) and heat over medium-high heat.
5. Once the oil is hot, carefully add the chicken tenders in batches. Avoid overcrowding the pan. Fry for about 5-6 minutes on each side, or until golden brown and cooked through. The internal temperature should reach 165°F at a minimum.
6. Remove the cooked tenders from the skillet and place them on a paper towel-lined plate to drain excess oil.
Serve hot with your favorite dipping sauce, ketchup or homemade honey mustard! Along with a side of homemade French fries! They also taste great in salad!
