Healthy Apple Cinnamon Muffins: A Family Favorite!

With autumn in the air, I decided it was the perfect time to bake some healthy apple cinnamon muffins. These muffins are moist, flavorful, and packed with wholesome ingredients that make them a great snack or breakfast option.

Ingredients
2 cups of unbleached flour
1 cup of unsweetened applesauce
1/2 cup of honey or maple syrup
1/2 cup of whole milk
2 eggs
2 teaspoons of baking powder
1 teaspoon of baking soda
1 tablespoon of cinnamon
1/2 teaspoon of nutmeg
1/4 teaspoon of sea salt
2 cups of diced apples (granny smith or honey crisp work well)
1/2 cup of chopped walnuts or pecans

Directions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

In a large bowl, whisk together the applesauce, honey (or maple syrup), milk, and eggs until well combined.

In another bowl, mix the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and sea salt.

Gradually add the dry ingredients to the wet mixture, stirring just until combined. Be careful not to overmix! Fold in the diced apples and nuts.

Divide the batter evenly among the muffin cups, filling each about two-thirds full.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let them cool in the pan for a few minutes before transferring to a wire rack.

Tips
These muffins stay fresh in an airtight container for about 2-3 days in the fridge. You can also freeze them for a quick breakfast or snack later!
