Maple Pecan Granola for Fall

I have started to find myself in the kitchen more often, embracing the cozy vibes of the season ahead. One of my favorite recipes to whip up during this time is my Maple Pecan Granola. It’s perfect for those brisk mornings when you want something quick and comforting!

Growing up, my mornings often began with a bowl of cereal or oatmeal, but when I became a mom, I wanted to create something special that my family would look forward to in the fall. This granola checks all the boxes: it’s crunchy, sweet, and packed with wholesome ingredients. Plus, the combination of maple syrup and toasted pecans give me all the feels of fall!

One of the best things about this Maple Pecan Granola is how versatile it is. My kids love it sprinkled over yogurt with fresh fruit, while I enjoy it as a quick breakfast with a splash of whole milk. It also makes a quick snack on its own. I will often use this granola in my meal prep fall parfaits!

Ingredients
3 cups old-fashioned rolled oats
1 cup pecans, roughly chopped you can also leave
1/2 cup pumpkin seeds
1/2 cup shredded unsweetened coconut
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 cup maple syrup
1/4 cup coconut oil (melted)
1 teaspoon vanilla extract
Optional: 1/2 cup dried cranberries or raisins for a touch of sweetness

Instructions
Start by preheating your oven to 325°F. Line a baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the oats, chopped pecans, pumpkin seeds, shredded coconut, salt, and cinnamon. Stir well to combine.

In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract. Pour this mixture over the dry ingredients and stir until everything is evenly coated.

Spread the granola mixture evenly on the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through to ensure even toasting. Keep an eye on it; you want it golden brown but not burnt!

Once baked, let the granola cool completely on the baking sheet. It will become crunchier as it cools. If you’re adding dried cranberries or raisins, mix them in after the granola has cooled.

How To Store It
Transfer the granola to an airtight container. It will keep for about a week and a half—if it lasts that long! I do keep ours in the fridge for extra safety!
