Fluffy Pumpkin Pancakes: A Hearty Fall Breakfast

Ingredients
1 cup unbleached all-purpose flour

1/2 cup oat flour
1 tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 cup pumpkin puree
1 cup milk (I use whole milk)
1 large egg
2 tablespoons honey or maple syrup (I use honey, adjust to taste)
1 teaspoon vanilla extract
Instructions
In a large bowl, mix together the flour, oat flour, baking powder, cinnamon, nutmeg, and salt. This will be the base of your pancakes.
In another bowl, mix the pumpkin puree, milk, egg, honey (or maple syrup), and vanilla extract until well combined.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps!
Preheat a skillet or griddle over medium heat. I like to use a little coconut oil so they don’t stick.
Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side (about 2-3 minutes per side).
Now for the fun part! Stack the pancakes on a plate and serve with a drizzle of pure maple syrup and pecans! My kids love adding sliced bananas and chocolate chips on top!
