Ingredients

3 pounds of red potatoes
1/3 cup whole milk
4 tablespoons unsalted butter
3-4 cloves of garlic, minced
Salt and pepper, to taste
2 tablespoons chives
2 tablespoons parsley
1 tablespoon rosemary
1 tablespoon thyme
Olive oil (for drizzling

Instructions
Wash and peel the potatoes if desired. Cut into evenly sized chunks.

Place the potatoes in a large pot and cover with cold water. Add a generous pinch of salt.

Bring to a boil, then reduce to a simmer and cook until fork-tender, about 15-20 minutes.

Drain the potatoes and return them to the pot. Let them sit for a minute.

Using a potato masher, mash the potatoes, leaving some lumps.

Warm the milk and butter together. Gradually mix into the potatoes until creamy.

Stir in the minced garlic, chives, parsley, rosemary and thyme. Mix well to distribute the herbs evenly.

Taste and adjust seasoning with salt and pepper.

Transfer to a serving bowl. Add a drizzle of olive oil if desired.
