Spook-tacular Sugar Cookie Ice Cream Sandwiches for Halloween!
As Halloween approaches, my excitement for all things spooky and sweet is in full swing! This year, I’m planning a fun Halloween party, and I wanted to share a delightful treat I’ll be making: Sugar Cookie Ice Cream Sandwiches! I saw something similar on Instagram the other day but I wanted to put my own healthier spin on it and make the cookie layers from scratch!

The combination of these sugar cookies and the vanilla ice cream is pure magic! Plus, these sandwiches are versatile. I wanted to give them a little Halloween vibe so I added the orange, green and chocolate sprinkles.
These sugar cookie ice cream sandwiches will not only be a hit at our Halloween party but are also a fun project to do together as a family. My kids LOVED these and so did I!
To make it even more festive, you could use cookie cutters to create fun shapes, like pumpkins or ghosts, or even dye the ice cream orange with food coloring!

Mostly healthy sugar cookie recipe. Make Twice. One For Top & Bottom.
Ingredients
1 cup flour
1/2 cup unsalted butter, softened
1/4 cup maple syrup
1/4 cup cane sugar
1 egg
1 tsp vanilla extract
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
Optional: 1/4 cup dark chocolate chips or nuts for added flavor
Sugar Cookie Instructions
Preheat your oven to 350°F.
Combine Dry Ingredients and mix.
Scoop dough into an 8×8 pan with parchment paper and flatten with a spatula.
Bake for 10-12 minutes, or until the edges are lightly golden. The cookies will be soft when you take them out, so let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Let the cookies cool completely on the wire rack.
