Pumpkin Oatmeal For A Cozy Fall Morning

There’s something magical about fall mornings, isn’t there? The air is crisp, the leaves are turning, and the world outside my window looks like a cozy painting on our farm. With the arrival of October just around the corner, I find myself reaching for all things pumpkin, so I decided to whip up a batch of pumpkin oatmeal!

I stumbled upon pumpkin oatmeal while scrolling through social media, and I was instantly intrigued so I thought I would give it a try with my own twist. Oatmeal is a breakfast classic in our house, but adding pumpkin? I knew it would be a hit, especially with my kids, who are very picky but love pumpkin pie and oatmeal.

So, the other morning, I gathered my ingredients and the scent of cinnamon filled the kitchen as I cooked the oats, and my kids came running. It’s amazing how the aroma of something baking or cooking can bring everyone together. I love how cooking allows me to create new traditions with my family.

Ingredients
1 cup rolled oats
2 cups whole milk
1/2 cup canned pumpkin puree
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon maple syrup
Pinch of sea salt

Toppings (optional)
Chopped nuts (e.g., pecans or walnuts)
Dried fruits (e.g., cranberries or raisins)
maple syrup

Instructions
In a medium saucepan, combine the rolled oats, milk, pumpkin puree, cinnamon, nutmeg, maple syrup, and a pinch of salt.

Bring the mixture to a gentle boil over medium heat. Reduce the heat to low and let it simmer, stirring occasionally, for about 5-7 minutes, or until the oats are tender and the mixture has thickened to your desired consistency.

Once cooked, remove from heat and let it sit for a minute. Spoon the oatmeal into bowls.

Top with your favorite toppings—nuts or dried fruits.

Serve warm and enjoy your cozy fall breakfast!

Cooking Tips
For a creamier texture, you can substitute half of the milk with yogurt.
Adjust the sweetness to your preference by adding more or less maple syrup.

So, if you’re looking for a new fall breakfast idea, I highly recommend giving pumpkin oatmeal a try. It’s easy, delicious, and perfect for those chilly mornings. Plus, it’s an excellent way to sneak in some veggies for the kids. Who knew they’d love it so much?
